- 4 Lamb steak (loin, each about 160 g)
- salt
- freshly ground peppers
- 8 Tomatoes
- 300 grams baby Spinach
- 2 red onions
- 1 green Bell pepper
- balsamic vinegar
- olive oil
Preparation steps

For the spinach salad: Rinse, halve and quarter the tomatoes. Peel the onions and cut into wedges. Rinse the spinach and spin dry. Rinse the bell pepper, cut in half lengthwise, remove seeds and white ribs, and cut into thin strips. In a bowl, toss the tomatoes with the onions, spinach and bell peppers.

For the dressing: In a bowl, whisk the 4 tablespoons of the oil with the balsamic vinegar. Season with salt and pepper to taste. Drizzle over the salad and toss until thoroughly combined.

For the lamb: Heat a grill pan or charcoal grill. Sear the lamb on both sides. Brush with 1 tablespoon of the oil, and season with salt and pepper to taste.
For serving: Serve the lamb with the salad.
