- 1 Lamb shoulder (About 1.2 kg)
- 4 garlic cloves
- 1 Tbsp honey
- 100 milliliters olive oil
- 1 Tbsp Coriander
- 1 Tbsp Mustard seed
- 1 Tbsp peppercorns
- 2 sprigs rosemary
- 3 sprigs thyme
- salt

Preparation steps

Rinse lamb, pat dry and score fat in diamond pattern. Peel garlic and cut 2 cloves into slices. Stick garlic slices into meat. Chop the rest of garlic finely and mix with honey and oil. Crush coriander, mustard and pepper in a mortar coarsely and combine with oil. Rinse and shake dry herbs, pluck off leaves and chop coarsely. Add herbs to oil mixture.

Rub meat with herb oil and refrigerate, covered, for about 3 hours. Remove and thread on a large skewer. Season with salt. Grill on low heat (ideally on BBQ setting) for about 1-1 1/2 hours, turning occasionally. Brush with oil often, Serve.
