4 beef tenderloin (1 1/2-inches thick)
4 slices Bacon (optional)
freshly ground Black pepper (to taste)
vegetable oil (for grill grate)
coarse salt (to taste)

Preparation steps

Wrap a strip of bacon around each fillet, securing it with kitchen twine or a wooden toothpick. Season each fillet with freshly ground black pepper and place in a single layer on a platter. Let beef reach room temperature, about 45 minutes on the kitchen counter.

Prepare grill for direct grilling. Preheat to high heat.

Prior to placing the fillets on the grill, brush the grill grate with oil. Using tongs place the fillets on the grill. Let them cook undisturbed for 2 minutes. If flames flare for more than 30 seconds, spray with a little water.

After about 2 minutes, lift the fillets using tongs, and turn the fillets 90 degrees. Cook for another 3 minutes. Using tongs, gently flip the fillets (one time only) and cook undisturbed for 2 minutes. Again, turn 90 degrees and continue cooking for 3 minutes (for medium-rare).

Check for doneness by pushing on the fillet with your index finger. A rare steak will leave an indention of your finger. A medium steak will give a little, but not leave an indention. A well done steak will feel firm to the touch.
6.
Remove fillets from grill. Carefully remove kitchen twine or toothpick. Transfer to a serving platter and let rest for about 3 minutes. Season to taste with salt and pepper. Serve.
