- 250 grams mixed Lettuce (castelfranco, beetroot leaves, watercress)
- 10 Thai asparagus
- 2 ripe Avocados
- 1 Tbsp lemon juice
- 2 scallions
- 250 grams Smoked salmon (in slices)
- For the dressing
- 2 Tbsps Yogurt (0.1% fat)
- ½ lemon (juice)
- 4 Tbsps olive oil
- 1 Tbsp chopped Dill
- 1 Tbsp chopped parsley

Preparation steps

Rinse lettuce, spin dry and chop into bite size pieces. Rinse the Thai asparagus and cut off the ends. Halve the avocados, remove the pits, detach the flesh, cut into wedges and drizzle with lemon juice. Rinse, trim and cut diagonally the scallions into very thin rings. Pick apart the smoked salmon into bite-size pieces. Place the lettuce, asparagus, scallions and the salmon on plates.

For the dressing, whisk the yogurt with lemon juice, drizzle the olive oil and stir in the chopped herbs. Season with salt and pepper. Drizzle dressing over the salad and serve immediately.
