- 2 Tbsps olive oil
- 1 onion (chopped)
- 1 stick Celery (, thinly sliced)
- 3 Tbsps Risotto
- 1 sprig thyme
- 2 ⅓ cups shelled Broad bean
- 4 cups vegetable stock
- salt
- peppers
- ¾ cup peas
- 2 cups canned navy bean (drained)

Preparation steps
1.
Heat the oil in a large pan and gently cook the onion and celery until softened, but not brown.
2.
Stir in the rice, add the thyme and cook for 1 minute.
3.
Add the broad beans and stock and season with salt and pepper. Bring to a boil, then simmer for 5 minutes
4.
Add the peas and cook for a further 5 minutes. Remove the thyme. Stir in the haricot beans.
5.
Transfer about 1/3 of the soup to a food processor or blender and process until smooth. Return to the vegetables in the pan.
6.
Reheat and pour into serving bowls. Garnish with chopped parsley and parsley leaves.
