Green Minestrone with Ravioli
Peel the garlic and finely chop. Peel the onions and cut into strips. Peel and slice the carrots. Shell the peas, rinse and drain.
In a saucepan, melt the butter and sauté the garlic and onion strips 1-2 minutes until translucent. Add the remaining vegetables and pour in the broth. Season with salt and pepper and simmer over medium heat for 15-20 minutes.
Add the ravioli and heat for 2-3 minutes. Check for seasoning, pour into bowls and serve sprinkled with parsley.
