Wash, dry, and thin out the mint leaves.

Melt the butter in a large saucepan, add the onion, and sweat until it starts to soften and brown.

Pour in the stock and bring to the boil. Lower the heat and add the peas, mint (keeping some of both back for garnish), salt and pepper and then simmer for 25 minutes stirring occasionally.

When cooked, use a hand blender to liquidise the soup. Add the cream and bring to a simmer. Remove from the heat and pour into a salad bowl and allow to cool for 2 hours in a fridge.
5.
Pour the soup into bowls, garnish with mint sprigs and a few peas, and serve as a delicious summer starter or lunch.
