400 grams green Asparagus
1 shallot
40 grams butter
650 milliliters chicken stock (prepared)
20 grams butter
1 Tbsp lemon juice
salt
freshly ground peppers

Preparation steps

1.

Rinse asparagus, snap off woody ends and peel the bottom thirds. Cut into small pieces.

Peel and finely chop shallots. In a pot, fry shallots in melted butter. Add asparagus and sauté briefly. Season with salt and pepper, add poultry broth and simmer about 10 minutes. Remove approximately 1 scoop of asparagus. Purée remaining soup, return  asparagus pieces to pot, heat until warmed through, and season with lemon juice. Serve immediately.
