1 chicken 1-2 kg (approximately 2-4 lbs)

4 starchy potatoes (cooked and peeled)
2 fresh lemons (juice)
2 eggs
2 Dill

Preparation steps

Rinse the chickens, drain and cover with water in a sufficiently large pot. Bring the water to a boil, skim any fat from the top, and add salt and pepper. Cover and simmer for 60-75 minutes over medium heat. Remove chickens from the broth, separate the meat from the bones and set aside.

Mix the lemon juice with the eggs and gently stir in one ladle full of warm broth (not boiling). Add the egg and lemon broth mixture back into the pot while stirring, warm slightly and season again. Mash the potatoes and distribute among soup bowls with the chicken meat. Add the broth and serve garnished with dill and a slice of lemon.
