Greek Cucumber Salad
Halve the cucumber and scrape out the seeds, then slice thinly. Rinse and drain the tomatoes. Peel and chop the onion, then drain the feta and cut into cubes. Rinse and dry the parsley, then remove the leaves and finely chop. Mix everything for the salad together, divide onto plates, and season lightly with salt.
For the vinaigrette, mix the lemon juice, vinegar, and oil. Season to taste with pepper. If necessary, add more oil, or a little water. Transfer to a small bowl and serve with the salad.
