- 2 Tbsps olive oil
- 4 Tbsps butter (more if needed)
- 4 Halibut steak (skinned)
- salt
- peppers
- 1 lemon (juice)
- 1 large Eggplant (diced)
- 1 large potato (diced)
- 1 onion (diced)
- 7 ozs mixed Wild mushroom (sliced)
- To serve
- Lettuce
- Radish
- spinach puree

Preparation steps
1.
Heat half the oil and half the butter in a large frying pan and cook the fish for 3-4 minutes on each side until golden brown on both sides, but still white in the middle
2.
Remove the fish from the pan and season to taste with salt and pepper. Squeeze some lemon juice over each steak. Cover and keep warm in a low oven.
3.
Heat the remaining oil and butter in the pan and cook the vegetables until tender and lightly browned. Remove from the pan and keep warm.
4.
Add the mushrooms to the pan and cook until tender and browned, adding more butter if necessary.
5.
Arrange the lettuce and radishes on a serving platter and spoon the vegetables and mushrooms on top.
6.
Place the halibut steaks on top and garnish with spinach puree, as in the photo.
