- 2 Eggplant (ends cut off, remainder cut lengthways into 1 cm thick slices)
- all-purpose flour
- 2 eggs (beaten)
- 1 ½ cups mature Manchego (or Parmesan, grated)
- ¼ cup olive oil
- parsley (to garnish)

Preparation steps
1.
Dust the aubergine slices with flour, drag through the beaten egg, roll in the cheese, and press the coating on firmly.
2.
Heat the oil in a large pan and fry the aubergine slices on all sides until golden brown. Remove from the pan and pat dry with kitchen paper.
3.
Arrange on plates and serve garnished with parsley leaves. Goes well with caper fruits and dry red wine.
