¼ cup butter
1 small Pineapple (peeled and cut into wedges)
4 Tbsps dark Rum
4 caster sugar
Whipped cream (to serve)

Preparation steps

1.
Melt the butter in a wide pan and gently cook the pineapple for about 2 minutes on each side. Remove from the pan and put on warm serving plates.
2.
Turn up the heat, add the rum to the pan, let it bubble then stir in the sugar and cook until the sugar has just dissolved and started to brown.
3.
Pour the sauce over the pineapple and serve immediately with the cream alongside.
