- 2 untreated lemons (zest sliced, juiced)
- 1 tsp fresh ginger (grated)
- 2 Tbsps Fructose
- 2 ripe Pear (quartered, stones removed, cut into equal pieces)
- 1 Tbsp Dark chocolate (50% cocoa, grated)
- 1 untreated lemon (to garnish, zest grated, quartered)

Preparation steps
1.
Boil the zest with the ginger, fructose and 250 ml water in a pot then allow to simmer and reduce on a low heat for 10 minutes.

Place 2 tbsp lemon juice and 50 ml water in a small pot and poach the pears in it for approx. 8 minutes.

Sift the ginger syrup. Mash the pears and stir into the syrup. Pour into a metal bowl and freeze for 3-4 hours stirring every 30 minutes with a fork so that the sorbet forms small crystals.
4.
To serve fill the sorbet into high glasses. Sprinkle the grated lemon zest and the chocolate over the top and garnish with the lemon slices.
