- 2 cups Zucchini (large diced)
- ½ cup kalamata Olives (pitted and quartered)
- ¼ cup parsley (chopped)
- ¼ cup olive oil
- 2 Tbsps lemon juice
- kosher salt (to taste)
- freshly ground Black pepper (to taste)

Preparation steps

In a large bowl, combine chickpeas, zucchini, olives and parsley. Pour olive oil and lemon juice over salad and toss well to mix. Season with salt and pepper and serve room temperature.
