- 1 whole chicken (approx. 1. 4 kg)
- 2 Tbsps olive oil
- ⅔ cup nibbed almonds
- 1 ⅓ cups Plum (stoned and chopped)
- 2 sprigs rosemary (leaves picked)
- 2 shallots (finely chopped)
- olive oil (for the roasting dish)
- 1 unwaxed Orange (juice and zest)
- ¼ cup runny honey
- 1 Tbsp butter

Preparation steps
1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and oil a roasting dish.
2.
Using poultry scissors, cut the chicken into 8-10 pieces, and season well with salt and ground black pepper.
3.
Mix together the oil, almonds, plums, rosemary and shallots and slide under the skin of the chicken pieces. Put the chicken in the dish and bake in the oven for around 30 minutes.
4.
In a pan, warm the orange juice and zest with the honey and butter. Simmer gently for around 10 minutes until it has thickened slightly.
5.
Remove the chicken from the oven and serve drizzled with the orange and honey sauce.
