Fruity Meat Strudel with Pistachios
Preheat the oven to 200°C (180 fan) | 400°F | gas 6.
Sear the lamb fillets on all sides in a pan for 1-2 minutes. Season and set aside.
Lay the filo sheets out and cut in half, to give 12 sheets. Place a layer of filo on the surface, brush with melted butter, then repeat with two more sheets. Place the lamb fillet on top, brush with a little honey and wrap in filo to enclose and make a parcel. Place on a baking sheet and repeat for the remaining lamb fillets.
Brush with more melted butter, sprinkle with flaked almonds and bake in the oven for 15 minutes.
Meanwhile, make a cross in the top of the figs and place snugly in a small baking dish. Drizzle with honey and sprinkle with pistachios and bake for 5-6 minutes until warmed through.
Serve the lamb parcels with the honeyed figs alongside.
