- 400 grams Fruit (washed, peeled if necessary and pitted and diced)
- 100 grams sugar
- 1 Lime (juiced and zested)
- 1 egg white
- Plastic Containers for popsicles (reusable) or or tall, narrow cup
- Wooden stick (or flat wooden paddle)

Preparation steps
1.
Puree fruit in a blender and strain through a sieve.

Bring sugar to a boil with 4 tablespoons water until syrupy, then allow syrup to cool and mix with the puree, lime juice and lime zest. Beat egg white until stiff. Fold into the fruit puree. Pour mixture into a flat metal mold and place in the freezer. Stir occasionally (so that no large ice crystals form).
3.
When the mixture is half frozen, transfer to individual molds or cups, insert handles and freeze for 2-3 hours before serving.
