- 1 tsp Corn starch
- ⅜ cup dry white wine (or 100 ml apple juice)
- 3 Tbsps Vanilla sugar
- 2 Apple (peeled and diced)
- ⅜ cup Apple juice
- 2 Tbsps honey
- 1 lemon (juice)
- ⅞ cup cream
- ½ cup Amaretti biscuits (crumbled)
- 4 Tbsps Calvados
- ground cinnamon (to sprinkle)

Preparation steps
1.
Mix the cornflour with the wine and 2 tbsp vanilla sugar.

Add the apples to the apple juice, honey and lemon juice and bring to the boil. Add the cornflour mixture, stirring, and mix through well. Continue to stir, thickening slightly, then remove from the heat and leave to cool.
3.
Whip the cream with the remaining vanilla sugar until stiff.
4.
Spoon the apple compote into glasses, reserving 4 tbsp. Sprinkle over half of the biscuits crumbs and drizzle with Calvados. Add around half of the whipped cream, top with the reserved apple and scatter over the remaining biscuit crumbs. Finish with the remaining cream and serve sprinkled with cinnamon.
