- ¾ cup butter
- 4 tablespoons honey (plus extra to taste)
- 1 ½ cups self-rising flour
- 4 eggs (beaten)
- ⅞ cup cold, strong, black Coffee
- 1 tablespoon Marsala wine
- 2 cups Mascarpone
- vanilla extract
- ⅞ cup cream (48% fat)
- 11 ounces Strawberries (sliced)
- 2 cups Blueberries
Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a baking dish, about 1cm|1/2" deep.
2.
Melt the butter and honey in a pan over a low heat.
3.
Sift the flour into a mixing bowl and pour on the hot liquid. Mix well until blended.

Beat in the eggs until well mixed.
5.
Spoon into the dish and bake for about 20 minutes until risen and golden.
6.
Mix together the coffee and marsala and spoon over the cake. Cool, then cover with cling film and chill for 1 hour.
7.
Beat together the mascarpone, vanilla and honey to taste.
8.
Whisk the cream until thick, then fold into the mascarpone mixture.
9.
Spread on top of the cake and arrange the berries on top.
