4 large Bramley Apple (peeled, cored, and cut into wedges)
¼ cup caster sugar
1 Tbsp lemon juice
16 ozs ready-made Sponge cake (cut into rounds)
½ cup Chambord (or creme de mure)
½ cup sweet sherry
2 cups double cream
½ cup powdered sugar
2 cups Blackberry

Preparation steps

1.
Combine the apple wedges, caster sugar, and lemon juice in a saucepan. Cover and cook over a medium heat for 8 - 10 minutes until softened. Leave to cool to one side.
2.
Line the base of a 20 cm|8" springform round cake tin with one third of the sponge. Drizzle over some of half of the Chambord and sherry.
3.
Whip the cream with the icing sugar in a mixing bowl until stiffly peaked. Spoon a third of the cream into a separate bowl and chill until needed. Fold three-quarters of the blackberries into the main bowl of cream.
4.
Layer some of the apple wedges on top of the sponge and top with half of the blackberry cream. Top with more sponge and then the rest of the apple wedges and then the blackberry cream.
5.
Top with a final layer of sponge and drizzle over the remaining Chambord and sherry. Cover and chill for 15 minutes.
6.
Turn out the trifle and slide onto a cake stand. Top with the remaining whipped cream and garnish with the remaining blackberries.
