- 2 cups Biscuit (plain)
- ½ cup unsalted butter (melted)
- 2 ½ cups cream cheese
- 1 cup powdered sugar
- 2 tsps vanilla extract
- 1 ⅓ cups cream (48% fat)
- 1 cup Raspberries
- 3 halved, canned Peaches (chopped)
- To decorate
- canned, sliced Peaches
- Raspberries
- grated Chocolate

Preparation steps
1.
Line the base and sides of a 20cm|8" springform tin with non-stick baking paper.
2.
Stir together the biscuit crumbs and melted butter. Press into the base of the tin and chill.
3.
Beat together the cream cheese, icing sugar and vanilla until smooth.
4.
Add the cream and whisk until combined.
5.
Scatter over the raspberries and peaches and fold in gently.
6.
Spoon the cream mixture onto the biscuit base, working from the edges inwards. Smooth the top and chill overnight until set.
7.
Remove from the tin and decorate with peach slices, raspberries and grated chocolate.
