- 400 grams waxy potatoes
- 1 onion
- 2 Red Bell pepper
- 4 Tbsps olive oil
- 150 grams Goat cheese
- 6 eggs
- 4 Tbsps Whipped cream
- salt
- freshly ground peppers
- scallions (for garnish)

Preparation steps
1.
Peel potatoes, rinse and cut into 5 mm (approximately 1/4-inch) thick slices. Peel the onion and cut into strips. Rinse the bell peppers, halve, peel (preferably with a peeler) and cut into wide strips.

Fry potatoes in a pan with oil, covered, about 10 minutes, turning occasionally. Add the onion and bell peppers and fry for another 4-5 minutes.

Cut the cheese into slices.

Preheat the oven to 180°C (approximately 350°F) convection. Line a oven-proof skillet or baking sheet with parchment paper and add the potatoes, onion and bell peppers.

Whisk eggs with the cream and season with salt and pepper. Top the potato slices with cheese, pour over the eggs and bake in the oven until golden brown, about 25 minutes.
6.
Serve sprinkled with chives.
