- 400 grams Sweet potato
- 1 shallot
- 1 soft-boiled egg
- 4 Tbsps White vinegar
- 5 Tbsps Vegetable broth
- 5 Tbsps olive oil
- salt
- peppers (freshly ground)
- 1 Frisée
- ½ bunch Radish
- 1 bunch scallions

Preparation steps
1.
Cook sweet potatoes in their jackets, peel and let cool.
2.
Peel shallot and chop finely. Peel eggs and mix the yolks with shallot, vinegar, broth and oil. Season generously with salt and pepper.
3.
Rinse the frisee lettuce, trim, spin dry and tear into bite-sized pieces. Rinse radishes, trim and cut into thin slices.
4.
Rinse scallions, trim and cut diagonally into rings. Cut sweet potatoes in half, then cut into slices.
5.
Mix the dressing with the salad ingredients and serve.
