600 grams cooked potatoes (day-old)
250 grams cooked Pork (such as from frying)
120 grams Smoked pork chop (cooked)
2 Treber sausages
150 grams Cherry tomatoes
100 grams Arugula
2 scallions
2 Tbsps clarified butter
salt
freshly ground peppers
1 pinch ground Caraway

Preparation steps

Peel the potatoes and cut into slices. Chop the pork coarsely. Cut the smoked pork in cubes about 1 cm (approximately ½ inch). Cut the bratwurst into 1.5 cm (approximately ½ inch) long pieces. Rinse the cherry tomatoes, drain and cut in half. Rinse the arugula, sort, trim hard stems and shake dry. Rinse and cut the scallions into thin rings.

Heat the clarified butter in a cast iron skillet and fry the potatoes in it for about 4 minutes. Add the scallions, pork and smoked pork, and fry for another 5 minutes. Add the cherry tomatoes and arugula. Remove from heat and season with salt, pepper and cumin. Serve immediately.
