- 1 cup Feta (cut into 2 inch cubes)
- 1 cup cherry Tomatoes (halved)
- 1 Red onion (cut into 2 inch squares)
- Celery (to garnish)
- ⅔ cup Parma ham (cut into strips and rolled into bite-sized pieces)
- 2 rashers smoked Bacon (halved and rolled up)
- ⅜ cup extra virgin olive oil
- salt
- Black pepper
- 2 Tbsps Sherry vinegar
- wooden Skewer

Preparation steps
1.
Preheat the grill to hot.

Cook the streaky bacon for 5-7 minutes, turning occasionally until golden brown all over.
3.
Whisk together the olive oil and the sherry vinegar and set to one side.
4.
Arrange the cherry tomatoes, Parma ham, feta cheese, red onion, streaky bacon and celery leaves evenly on skewers, starting and finishing with a half of cherry tomato.
5.
Arrange the brochettes on a serving plate and dress with the prepared dressing. Season well with salt and plenty of black pepper. Serve immediately.
