- 800 grams fresh Anchovy fillet
- Pastry flour
- 50 milliliters olive oil
- 1 lemon (untreated)
- 5 garlic cloves
- 2 bay leaves
- 1 sprig rosemary
- 200 grams sun-dried Tomatoes (in oil)
- smooth parsley (chopped)
- Sea salt

Preparation steps
1.
Make a shallow slit in anchovies along the belly, cut off heads behind the gills and pull out the center bone along with innards. Rinse abdominal cavities with cold water and dry with paper towels. Cover and chill.

Peel the garlic cloves and chop finely. Drain sun-dried tomatoes and chop. Cut lemon in half. Squeeze 1 half and cut the other half into half slices.

Heat the oil in a pan, add the anchovies and fry with bay leaves rosemary, garlic and chopped sun-dried tomatoes for 4-6 minutes. Deglaze with lemon juice and season with salt and pepper. Garnish with parsley and serve with the lemon wedges and white bread, if desired.
