1 Tbsp butter
1 onion (chopped)
1 Apple peeled; cored and diced (1/4-inch pieces)
1 tsp fresh thyme
4 cups Pumpkin (pulp, or squash puree)
4 cups Chicken broth
1 cup lean, smoked ham diced (1/4-inch pieces)

Preparation steps

Heat oil and butter in a large saucepan over medium-high heat until foaming from butter subsides. Add onion, apples, and thyme and sauté until onion is golden and apples are soft, about 5 minutes

Add pumpkin or squash and stir until smooth. Stir in broth and ham and simmer for about 20 minutes, stirring occasionally.

Season to taste with salt and pepper. Serve
