- 1 Tbsp olive oil
- 1 Tbsp butter
- 1 onion (chopped)
- 1 Apple peeled; cored and diced (1/4-inch pieces)
- 1 tsp fresh thyme
- 4 cups Pumpkin (pulp, or squash puree)
- 4 cups Chicken broth
- 1 cup lean, smoked ham diced (1/4-inch pieces)

Preparation steps
1.
Heat oil and butter in a large saucepan over medium-high heat until foaming from butter subsides. Add onion, apples, and thyme and sauté until onion is golden and apples are soft, about 5 minutes
2.
Add pumpkin or squash and stir until smooth. Stir in broth and ham and simmer for about 20 minutes, stirring occasionally.
3.
Season to taste with salt and pepper. Serve
