- 2 Tbsps olive oil
- 4 scallions (chopped coarsely)
- 3 cloves garlic cloves (minced)
- 2 bunches Asparagus (rough ends trimmed and coarsely chopped)
- 1 ½ cups frozen peas
- 4 cups Chicken broth
- ½ cup mint (finely chopped)
- salt (to taste)
- peppers (to taste)
- 2 cups Feta (to garnish)
- 4 tsps fresh Chives (finely chopped; to garnish)

Preparation steps

Heat the olive oil in large saucepan and sauté onions and garlic, stirring occasionally until translucent, about 5 minutes. Add asparagus to the onion and garlic mixture. Cook for 3 minutes until asparagus begins to soften. Add peas and stock and bring to a boil. Simmer until peas are tender, about 8 to 10 minutes.

Add mint leaves to the soup. Use an immersion blender or hand blender and puree until smooth.

Season soup to taste with salt and pepper. To serve, divide among serving bowls and top with crumbled feta cheese and chives.
