- 1 chicken (ready-to-cook, 1.4 kg)
- flour
- 2 Tbsps olive oil
- 4 rashers Bacon (cut into strips)
- 3 ⅓ cups waxy potatoes (peeled and cut into wedges)
- 5 shallots (sliced)
- 2 garlic cloves (finely chopped)
- 3 Tbsps black Olives (pitted)
- 6 sprigs thyme (chopped)
- 2 bay leaves
- 1 ⅔ cups cherry Tomatoes (halved)
- 1 ⅓ cups chicken stock
- ⅜ cup dry white wine

Preparation steps
1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.

Break the chicken into eight pieces, season with salt and pepper and dust with a little flour.
3.
Heat the oil in a pan and fry the chicken until golden brown. Remove from the pan and set aside. Add the bacon to the pan and fry until crispy. Add the potatoes, shallots, garlic, olives, thyme and bay leaves.
4.
Fry for a few minutes then transfer to an oven-proof dish. Add the tomatoes and the chicken, pour the stock and the wine over the top and braise in a preheated oven for around 40 min. Serve immediately.
