26 ozs stewing Beef (cubed)
1 carrot (chopped)
8 ozs shallots
1 red Bell pepper (seeds removed, roughly chopped)
1 green Bell pepper (seeds removed, roughly chopped)
1 stick Celery (chopped)
1 bottle robust Red wine
1 Bouquet garni
2 Tbsps olive oil
cup butter
½ cup diced, fatty Bacon
2 cloves garlic cloves (crushed)
1 Tbsp flour
½ cup Beef stock
4 tsps Brandy (or Cognac)
salt

6 ozs button Mushrooms

Preparation steps

1.
Put the meat into a bowl with the carrot, shallots, peppers, celery, wine and bouquet garni. Cover and chill overnight.

Heat the oven to 150°C (130° fan) 300°F gas 2.

Strain the marinade into a pan and bring to a boil, skimming off any foam and simmer for 5 minutes.

Pat the meat dry.

Heat half the oil and butter in a pan and brown the bacon. Put into a large casserole. Brown the meat in batches and transfer to the casserole.

Brown the drained vegetables and garlic and add to the casserole. Sprinkle the flour into the pan and stir in 4 spoonfuls of the marinade until combined. Add the remaining marinade, stock and brandy and bring to a boil. Pour into the casserole and stir well.
7.
Season to taste with salt and pepper.
8.
Cover and cook in the oven for 2 1/2-3 hours, until the beef is very tender.
9.
Halfway through cooking, heat the remaining oil and butter in a pan and brown the mushrooms. Add to the casserole, stir and return to the oven to finish cooking.
