100 milliliters Port wine
2 sprigs rosemary
4 sprigs thyme
1 Tbsp balsamic vinegar

Preparation steps

For the jam, peel onions and cut into strips. Heat 2 tablespoons olive oil in a pot and saute onion until translucent. Add brown sugar, allow to caramelize slightly and deglaze the pot with red wine and port wine. Rinse herbs, shake dry, tie a bouquet and add to onions. Let simmer over low heat for about 20 minutes until thickens. Remove herbs from the pot and season with balsamic vinegar, salt and pepper. Let cool.

Cut foie gras into 12 equal pieces and lightly fry in remaining oil on both sides in a nonstick pan until golden brown. Immediately remove from the pan and season with salt and pepper. Place foie gras onto 12 spoons and cover each with a little onion jam and serve as an appetizer.
