- ¾ cup caster sugar
- 1 tsp vanilla extract
- 1 egg
- ½ cup butter (melted)
- ¾ cup plain Yogurt
- 1 ¾ cups all-purpose flour
- 1 tsp Baking powder
- ¾ cup Almond flour
- 1 cup Candied cherry (halved)
- 1 cup sliced almonds

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Place large squares of greased greaseproof paper in a 12 hole muffin tin.
2.
Mix the sugar, vanilla, egg, butter and yoghurt together.
3.
Sift the flour and baking powder into a mixing bowl. Add the almonds.
4.
Stir in the egg mixture and mix quickly. The mixture will be lumpy. Stir in the cherries.
5.
Spoon into the lined tins and place flaked almonds on top of each muffin.
6.
Bake for 20 minutes until risen and golden. Place on a wire rack to cool completely.
