Ingredients

For the dough
175 grams Pastry flour
1 pinch salt
1 egg yolk
120 grams cold butter
For the filling
50 grams Mozzarella
50 grams Gorgonzola
50 grams Emmentaler cheese
50 grams Gouda
50 grams Parmesan
3 eggs
300 milliliters Whipped cream
5 Tbsps Crème fraiche
½ bunch Basil (cut into strips)
salt
freshly ground peppers
Pastry flour (for the work surface)

Preparation steps

For the dough, quickly knead the flour, salt, egg yolk and chopped butter into a smooth dough. Wrap in plastic and chill for 30 minutes.

Preheat the oven to 180°C (approximately 350°F).

Roll the dough out on a floured surface and line the pan with the dough.

For the filling, grate all of the cheeses. Mix together, season with salt and pepper and mix with the eggs, cream and creme fraiche. Stir in the finely chopped basil. Pour the mixture on the dough. Bake for about 35 minutes, until golden brown.

5.

Remove from the oven and serve hot.
