- 4 firm White fish (skinned)
- salt
- peppers
- flour
- 1 Tbsp butter
- 1 red Bell pepper (diced)
- 2 Limes (juice)
- 2 Mangoes (peeled and sliced)
- 2 scallions (finely chopped)
- 8 Lettuce (torn)
- 1 Tbsp chopped cilantro
- 4 Tbsps olive oil
- Black pepper
- To garnish
- Limes

Preparation steps
1.
Season the fish with salt and pepper and lightly dust with flour.

Melt the butter in a frying pan. Place the fillets in the pan, floured side down. Fry gently for 4-5 minutes, then turn the fish in the pan and remove from the heat. Leave to stand for a further 2-3 minutes, then remove from the pan and set aside to cool.
3.
Place the remaining ingredients in a bowl and toss together, seasoning to taste with salt and black pepper.
4.
Put the salad into serving bowls. Cut or flake the fish into pieces and arrange on top of the salad. Garnish with lime slices.
