Nutritional values

The Steinbeißer is particularly well suited for figure-conscious people, because it contains just 2 grams of fat per 100 grams and this consists mainly of healthy polyunsaturated fatty acids.

Leek cubes to fill: After the layers of the leek have been removed, you can also finely dice the remaining sticks, blanch them and then use them to fill the fish roulades. If it doesn't have to be low carb, you can serve natural rice cooked with leek with the fish roulade.

Preparation steps

1.

Cut off ends and dark green parts of the leeks and discard. Cut the leeks lengthwise and rinse. Remove the two outer layers of the leeks and blanch in boiling salted water for 2-3 minutes. Rinse and pat dry the fish fillets and brush each with 1 tablespoon of mustard. Cut the leeks in half, lay one half on the fish and roll, then wrap the roulades with the blanched leeks. Transfer into a pot fitted with a steamer basket insert and cook for 15 minutes. Meanwhile, stir the vanilla sauce mix into 1/4 liter (approximately 1 cup) of water and bring to a boil. Stir in the mustard and finish with the cream. Serve the sauce with the fish roulades.  Serve with rice.
