Preparation steps

1.

Combine quark with sour cream, brown sugar, cinnamon, vanilla bean seeds and lemon juice. Rinse, core and dice apples into small pieces. Chop walnuts coarsely and mix with apples into quark mixture.

Preheat oven to 180°C (approximately 350°F) and line a baking sheet with parchment paper.

Melt butter over low heat. Place a sheet of filo pastry on a damp kitchen towel and brush with butter. Lay the next filo sheet offset on top of the first and spread with butter. Complete remaining filo sheets with the same procedure until all are used. Spread apple quark mixture on top and leave the edges approximately 5 cm (approximately 1 3/4 inch) square. Sprinkle raspberries on top. Roll up from one side of the dough to make a roll. Place on the baking sheet and brush with remaining butter. Bake in the oven for about 30 minutes. Remove from oven and serve.
