800 grams fresh Figs
1 organic Orange
2 rosemary
5 thyme
500 milliliters white balsamic vinegar
2 Tbsps sugar
1 tsp salt

Preparation steps

Rinse, dry, and halve the figs. Rinse the orange in hot water, then peel 2 5 cm (approximately 2 inch) pieces of the zest. Rinse the rosemary and thyme, then dry.

Heat half of the vinegar in a small saucepan. Add the sugar and salt, then add the figs.

Divide the herbs and orange zest into two sterilized glass jars. Add the fig mixture, and cover with the remaining vinegar until covered. Seal tightly and let infuse in a cool place for 2 weeks.
