- For the cake
- 1 vanilla Sponge cake
- ½ cup Apricot Jam (or jelly)
- To decorate
- 3 ⅓ cups white Fondant
- Corn starch (for dusting)
- 1 cup Apricot Jam (warmed)
- ⅔ cup black Fondant
- assorted natural Food coloring (red, pink, green, orange)

Preparation steps
1.
For the cake: Make the vanilla sponge cakes. Remove to a wire rack to cool.

Once cool, turn out and trim the top flat with a serrated knife. Brush the top of one sponge with apricot jam. Position the other sponge on top.

To decorate: Roll out 500 g of the fondant to 1 cm | 0.5" thick round on a work surface dusted with cornflour. Brush the top of the cake with apricot jam and then drape the round of fondant over it, smoothing down for an even finish. Use a small cutter to give a fluted edge.

Roll out 150 g of the remaining white fondant to 2 cm | 1" thickness. Using a stencil or freehand, cut out the shapes of two ears, a chin, the bridge of a nose, and a top lip. Stick them to the cake using more jam as necessary.

Divide the remaining white fondant into three parts. Colour each with specs of green, pink, and red food colouring respectively, kneading well. Shape the green into two eyes, the pink into a nose, and the red into a tongue. Attach to the cake using more jam.
6.
Dilute the orange food colouring with a little water. Paint onto the cake where appropriate, painting the nose as well. Leave to dry.
7.
Roll out the black fondant to 2 cm | 1" thickness. Cut out two eyebrows, six stripes, and two thin strips. Attach the eyebrows over the eye, the stripes on either side, and the strips curling around the border of the ears.
