- For the dough
- ⅔ cup unsalted butter
- ½ cup light brown sugar
- 2 Tbsps Golden syrup
- 1 Tbsp Molasses
- 3 cups all-purpose flour
- 1 tsp baking soda
- 2 tsps ground ginger
- 1 tsp ground cinnamon
- 1 pinch salt
- For the icing
- 2 cups powdered sugar
- ½ tsp lemon juice
- water

Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Line a large baking tray with non-stick baking paper.

Melt the butter, sugar, syrup and treacle in a pan. Remove from the heat and allow to cool slightly.

Sift the flour, bicarbonate of soda, spices and salt into a mixing bowl. Stir in the butter mixture and mix to a firm dough. Allow to stand for 5 minutes.

Roll out the dough on a lightly floured surface. Cut out the reindeers in 3 sizes/shapes using cookie cutters or card templates, re-rolling the trimmings and rolling again.

Place on the baking tray and bake for 10-12 minutes until golden. Cool on the baking tray for 10 minutes, then place on a wire rack to cool completely.
6.
For the icing: sift the royal icing sugar into a bowl and beat in the lemon juice and just enough water to give a thick consistency. The mixture should be thick enough to coat the back of a spoon.
7.
Spoon the icing into a piping bag and pipe details on the gingerbreads, as in the photo. Attach the hearts for the noses and leave to set.
