6 Tbsps black, pitted Olives
150 milliliters dry white wine
130 grams butter
180 grams ground almonds
1 Tbsp freshly chopped thyme

Preparation steps

Preheat the oven to 200 ° C top and bottom heat Preheat.

Rinse and dry apples, quarter and core, cut into slices. Drizzle with 2-3 tablespoons of lemon juice.

Rinse and dry fennel, cut into slices and blanch  for 5 minutes in boiling salted water. Drain and rinse in cold water, drain again.

Drain olives.

Whisk butter with almonds, season with a pinch of salt and thyme, mix until crumbly.

Layer apple slices with fennel in a baking dish, add wine, sprinkle with olives, fennel leaves and crumble. Bake in preheated oven at 200°C (approximately 400°F) for about 20-25 minutes or until golden. Remove from oven and serve immediately. Serve.
