14 Tbsps cold butter (cut into small pieces)
¾ cup granulated sugar
3 egg yolks (2 whites reserved for icing)
1 Tbsp lemon juice
2 ¾ cups all-purpose flour
¼ tsp salt
1 tsp Baking powder
For Icing and Decoration
2 egg whites
3 ¼ cups powdered sugar
Food coloring
powdered sugar (for dusting)
Ribbon (if using as an ornament)

Preparation steps

In a large bowl, cream together butter and sugar until light, fluffy and smooth. Beat in eggs one at a time; add lemon juice. Add in flour, salt and baking powder; stir until well blended and dough is smooth. Shape dough into a ball. cover with plastic wrap and chill in the refrigerator for 2 hours or overnight.

Preheat oven to 350º F.

Divide dough into 3 equal portions. On a floured work surface, roll dough out to a 1/4-inch thickness. Cut dough into star shapes with a 3-inch cookie cutter. Place cookies on an ungreased baking sheet 1-inch apart. Bake 8 to 10 minutes or until slightly brown. Transfer cookies to wire rack to cool completely before decorating.

In a large bowl, using an electric mixer, beat the egg whites until soft peaks form. Gradually add the confectioners' sugar and beat until peaks are stiff and icing is smooth. Divide the icing into separate bowls and add the appropriate food coloring, red for hat and jacket, black for mittens and boots, etc.. Frost cooled cookies and dust with confectioners' sugar. Serve or add ribbon and use as an ornament.
