For the cupcakes
1 ½ cups self-rising flour
¾ cup caster sugar
1 Tbsp Almond flour
3 eggs
½ cup Sour cream
¾ cup butter (melted and cooled)
For the buttercream
cup unsalted butter
½ unwaxed lemon (juice and finely grated zest)
1 ¾ cups powdered sugar
milk (if needed)
yellow Food coloring
For the bees
½ cup yellow Sugar paste
½ cup black Sugar paste
½ cup white Sugar paste
powdered sugar
1 tube red piping gel
To decorate
edible wafer flower

Preparation steps

1.
For the cupcakes: heat the oven to 180°C (160° fan) 350°F gas 4. Place paper cases in a 12 hole bun tin.

Mix together the flour, sugar and almonds in a mixing bowl.

Beat the eggs into the soured cream, then pour into the dry ingredients with the melted butter. Beat until smooth.

Spoon into the paper cases and bake for about 20 minutes. Test to see if they are done by inserting a skewer or cocktail stick - it should come out clean. Cool in the tin for 5 minutes then place on a wire rack to cool completely.

For the buttercream: beat the butter and lemon zest until very soft and lighter in colour.

Sift in the icing sugar and add the lemon juice. Beat until totally incorporated and creamy. If necessary add a little milk and beat until blended. Beat in the food colouring.
7.
Spoon into a piping bag and pipe on top of the cakes, as in the photo.
8.
For the bees: roll pea size pieces of yellow sugarpaste into egg shapes.
9.
Roll out the black sugarpaste and cut strips to fit the bees. Brush lightly with water and attach to the bodies. Roll the remaining black sugarpaste into 24 tiny balls.
10.
Roll out the white sugarpaste on a surface dusted with icing sugar. Cut out 24 discs for the wings and 24 tiny discs for the eyes. Brush lightly with water and attach to the bees. Place on the cakes.
11.
Brush the black sugarpaste balls with water and press into the white disc eyes. Pipe the mouths with red piping gel.
12.
Decorate with wafer flowers and leave to set.
