1 small lemon (Juice)
450 grams Sour cream
100 grams Whipped cream
50 grams Yogurt (0.1% fat)
1 packet Bourbon vanilla powder
300 grams Ladyfinger

Preparation steps

1.

Gently clean raspberries, being careful to not let them become mushy. Mix half of raspberries with 1 tablespoon of sugar and set aside. Place remaining half of raspberries in refrigerator for the next day. Mix lemon juice with remaining sugar and 100 ml (approximately 1/2 cup) water. Bring to a boil and cook until sugar has dissolved.

Whip cream until very stiff and mix with yogurt, sour cream and vanilla sugar. Drain sugared raspberries and fold into mixture. Briefly dip ladyfingers into lemon water and use to line edge of Charlotte pan, setting a few aside for top.

Pour in raspberry cream and top with reserved ladyfingers. Cover and refrigerate overnight. Remove Charlotte from pan and garnish with remaining raspberries. Serve cold.
