- 3 egg whites
- 1 ¼ cups powdered sugar
- ⅓ cup all-purpose flour
- ¾ cup Almond flour
- ½ cup unsalted butter (melted)
- ½ tsp vanilla extract
- 3 ripe Apricot (skinned, pitted and diced)

Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Grease an 8 hole muffin tin.
2.
Whisk the egg whites until soft peaks form.
3.
Put the dry ingredients into a mixing bowl. Gently stir in the egg whites, melted butter and vanilla until combined.
4.
Gently stir in the apricots.
5.
Spoon into the tins and bake for 10-15 minutes until risen and golden. Cool in the tins for a few minutes, then place on a wire rack to cool completely.
