- 5 cups halved Apricot
- ½ cup flour
- 1 cup butter
- ¾ cup granulated sugar
- ¾ cup brown sugar
- 2 Tbsps Orange zest
- 2 eggs
- 1 tsp Vanilla
- 4 cups flour
- 4 tsps baking soda
- 2 tsps salt
- 1 cup Buttermilk
- 2 Tbsps Raw sugar

Preparation steps
1.
Preheat oven to 350º F / 175º C. Grease a baking tin with cooking spray. Toss the apricots with 1/2 cup flour and set aside.

Cream the butter, sugars and orange zest together for about 4 minutes. Add in the eggs, one at a time. Add the vanilla.
3.
Mix 4 cups flour, baking soda and salt. Add the dry ingredients to the batter, alternating with the buttermilk.
4.
Pour the batter into the greased pan and spread evenly. Put the apricots on top, pushing them lightly into the batter. Sprinkle 2 tablespoons of sugar on top evenly and bake for 35 minutes or until cake is completely cooked.
