- ¼ Cucumber
- 200 grams cooked duck legs
- 2 tsps vegetable oil
- 6 Tbsps Plum sauce
- 2 Nori seaweed
- 360 grams cooked Sushi rice
- ½ tsp Wasabi (tube)
- 1 bunch Chives
- 4 Tbsps pickled ginger (as desired)
Preparation steps

Rinse the cucumber, quarter lengthwise and remove seeds. Cut the duck into pieces. Heat the oil in a pan and saute the duck meat for 2 to 3 minutes. Add 4 tablespoons plum sauce to the pan and heat, turning the duck meat in the sauce.

Cut the nori sheets in half. Spread the rice on it, turn over the nori sheets, so that the rice side is facing down. Brush the nori lightly with wasabi and cover with the lukewarm duck and cucumber. Roll up from the long side using a bamboo mat and wrap the roll in plastic wrap and

Cut chives into small rings. Cut the sushi rolls in half and roll in chives. Cut each half into 3 pieces and drizzle with the remaining plum sauce. If desired, serve the duck rolls with pickled ginger.
