- ⅔ cup caster sugar
- 3 eggs (beaten)
- Almond extract
- 5 ozs Candied cherry (halved)
- 1 ½ cups self-rising flour
- ¾ cup Almond flour
- ¾ cup raisins

1 Peeler, 1 Measuring cups, 1 Cutting board, 1 Small pot, 1 Teaspoon, 1 Citrus juicer, 1 Tea strainer
Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease and line the base of a 900g|2lb loaf tin.
2.
Beat the butter and sugar in a mixing bowl until light and creamy.
3.
Gradually beat in the eggs and almond extract until blended.
4.
Toss the cherries in 1 tablespoon of the flour until coated. Stir into the mixture with the remaining ingredients until well mixed.
5.
Put into the tin and bake for 50-60 minutes until golden brown and cooked through. Insert a skewer into the middle of the cake- if it comes out clean it is cooked. Cool in the tin for 5 minutes, then place on a wire rack to cool completely.
