3 ½ ozs semi-sweet chocolate
3 egg whites
1 cup Almond flour
¾ cup caster sugar
1 Tbsp cocoa powder
For the filling
cup cream (48% fat)
3 ½ ozs plain Chocolate
1 Tbsp unsalted butter

Preparation steps

1.
Heat the oven to 140ºC (120º fan) 275ºF, gas 1. Line a large baking tray with non-stick baking paper.
2.
Melt the chocolate in a small pan set over a bowl of gently simmering water. Whisk the egg whites until they form soft peaks and set aside.
3.
Mix together the almonds, sugar and cocoa powder and gently fold into the egg whisked egg whites. Add the melted chocolate and mix gently but thoroughly.
4.
Drop about 32 small spoonfuls of the mixture onto the baking tray and gently flatten the tops. Bake for 1 hour. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
5.
For the filling: heat the cream until almost boiling. Put the chocolate in a small bowl then pour over the hot cream. Mix gently then stir in the butter and let cool. Beat well with a wooden spoon until the filling is thick and fluffy then sandwich together the macaroons.
