½ tsp Worcestershire sauce

Preparation steps

1.

Cook the eggs in boiling water for 10 minutes until hard. Drain, rinse with cold water, peel and cut in half lengthwise. Carefully remove the yolk and pass through a fine sieve. Stir in the crème fraiche, mayonnaise, mustard and Worcetsershiresauce and season with salt and pepper. Spoon the mixture into a piping bag with a serrated tip and pipe back into the egg.

Garnish to taste with chives, olives, peppers, salmon caviar, smoked salmon and shrimp.
